Fresh Pea and Mint Soup
This easy peasy summer soup only takes minutes to make, which you would never guess by how tasty it is! Peas are a favourite food of mine. Not only are they versatile but they are packed full with antioxidants and have good amounts of protein and fibre in them.

(Serves 4)

INGREDIENTS:
25g ghee or butter
2 shallots, chopped
2 garlic cloves, chopped
1/2 tsp of nutmeg
800g of pre-shelled peas
1 litre of vegetable stock
4 tbsp of roughly chopped fresh mint
Juice of half a lemon
Salt and pepper to taste

METHOD

Heat the ghee or butter in a large pan. Add the chopped shallots and garlic and cook on a medium heat for about 3 minutes until soft.

Add in the nutmeg and stir for 1 minute.

Add the fresh peas and pour in 1 litre of vegetable stock. Bring to the boil and then simmer for about 2 minutes.

Add the mint and simmer for another couple of minutes until the peas are tender.

Blend the soup in batches in a blender. Add the lemon juice and season with salt and pepper to taste.

COOKING TIP:
You can use frozen petit pois instead of fresh peas and the soup will still taste nice and sweet.
