Fresh Pea and Mint Soup

This easy peasy summer soup only takes minutes to make, which you would never guess by how tasty it is!  Peas are a favourite food of mine.  Not only are they versatile but they are packed full with antioxidants and have good amounts of protein and fibre in them.

METHOD

  1. Heat the ghee or butter in a large pan.  Add the chopped shallots and garlic and cook on a medium heat for about 3 minutes until soft.
  2. Add in the nutmeg and stir for 1 minute.
  3. Add the fresh peas and pour in 1 litre of vegetable stock.  Bring to the boil and then simmer for about 2 minutes.
  4. Add the mint and simmer for another couple of minutes until the peas are tender.
  5. Blend the soup in batches in a blender. Add the lemon juice and season with salt and pepper to taste.

COOKING TIP:
You can use frozen petit pois instead of fresh peas and the soup will still taste nice and sweet.
